Ingredients for 4 stuffed + 3 neutral loaves:

  • 250 g flour 00
  • 200 g flour manitoba
  • 150 g water
  • 125 g milk
  • 1 teaspoon sugar
  • 15 g  fresh yeast
  • 30 g lard or butter
  • 8 g  salt
  • 70 g  black and green olives

For the stuffing:

  • 200 g taleggio
  • Ham to taste

Dissolve the yeast in the water with a teaspoon of sugar, let it rest until you see it begins to ferment and then add it to the sifted flour and milk.

Mix well then add the soft lard, salt and the sliced olives. Make a ball and let it rise until doubled.

Put the dough in a floured surface, divide it into 7 pieces. Put 3 loaves of 30 cm  in a baking tray lined with baking paper and cover.

Roll out the other pieces in rectangle, fill them with slices of cheese and ham then roll closing the ends well.

Put these in a tray, cover and let rise until they will be inflated.

Bake at 200 degrees for about 20 minutes.
