Ingredients for 10 pieces per type:

  • 200 g of  00 flour
  • 200 gr of 00 flour for bread and pizza
  • 1 egg yolk
  • 40 g of extra virgin olive oil
  • 200 g of lukewarm water
  • 10 g of fresh brewer’s yeast
  • 7 gr of salt


  • Asiago or other cheese
  • Tomato sauce
  • Double concentrated tomato paste
  • Grana cheese grated
  • Baked ham
  • Sliced cheese
  • Sesame seeds

Knead the flour with 180 gr of water and yeast, join the egg yolk and knead it well, if it is necessary  add the rest of the water.
Add salt and oil  little by little (adding the oil for last).
You should  obtain a smooth and homogeneous mixture.
Shape a ball (with the mixture) and put it in a greasy bowl, leave it to rise until it is twice as much its form.
Reverse the mixture on the floury surface and shape several pieces.

Kaiser rolls
Shape 10 little balls about 25g, place all of them on a baking tin covered by baking paper and cover the mixture by a nylon sheet and leave for about an hour.
Brush them with a beaten egg yolk with milk and salt.
Sprinkle sesame seeds on their surfaces and  cook in the oven at 180° for 12 minutes.

Extend the rest of the mixture at a height of half a centimetre.
Cut the mixture in 10 spherical pieces of 5-6 cm of diameter and put them on a covered baking tin and cover .
When they swell poke the central part with a fork.
Spread a little tomato sauce (which has been salted and sprinkled of oregano) leave a small part free around the circumference of the surface.
Put some little cheese pieces and cook them in the oven for 12-15 minutes at 180°.

Pizzaiola bread-sticks
Cut stripes of 3 cm width.
Flatten them in the central part and spread  little  tomato paste and grated grana.
Roll them to a 1.5 cm thickness, cut a shape in 10 pieces of the desired measure and put them on the baking tin.
Cook in the oven for 10 minutes at 180° until it is golden.

Little brioches
Knead the rest of the mixture and let it rest for 15 minutes, then flatten and obtain a half centimeter width sphere.
Cut into wedges and roll them to make  brioches.
Put them on a baking tin and cover the tin.
When they  rise put into the oven at 180° for 12 minutes.
Stuffings are to your liking, and can be cut in half and filled with ham or cheese mousse, according to your taste.
