Ingredients for 4 persons:

  • 2 quails
  • 50 g of diced bacon
  • 6/7 sage leaves
  • 500 gr meat broth
  • White wine
  • Extra virgin olive oil
  • Salt and Pepper
  • 280 grams of spaghetti
  • Grated Parmesan cheese
  • Butter

Rinse well the quails and remove any remaining feather. Divide them into 5 pieces and then brown them.

very well on high heat in a pan in which you will heat a little olive oil, bacon and sage. Wash down with white wine and let it simmer,  then add salt and pepper.

Add a couple of ladles of hot broth and cook for about 30 minutes, adding more broth if  necessary. Let cool.

Picked clean all the pieces by hand and put them back into the baking pan with the remaining sauce and then  cook another few minutes to flavor well with salt and pepper if necessary.

Cook the pasta, drain and pan-fry  with the sauce with grated Parmesan cheese, a bit of butter and cooking water.

Serve immediately.

Of course, the sauce can be prepared in advance and heated just before serving.
