Ingredients for 4 persons:

  • 300 g rice with cereals (oats, barley etc.).
  • 2 tomatoes
  • 1 cucumber
  • 3 sticks of celery
  • 1 small onion (preferably red)
  • Pitted black olives
  • Salt and Pepper
  • Fresh oregano and marjoram
  • extra virgin olive oil
  • White wine vinegar

Wash and cut the tomatoes into small pieces.

Peel the cucumber, cut it in half and then again in half lengthwise, remove the seeds inside and cut it into small pieces.

Wash the celery and cut into small pieces.

Do the same with the onion. Put the ingredients in a bowl with the sliced olives and  add a few leaves of fresh chopped oregano and marjoram.

Dress with olive oil, salt, pepper and a bit of white wine vinegar to taste.

In the meantime boil the rice in salted water, drained and cooled immediately.

Add it to the vegetables, mix and keep in the fridge at least 2 hours before serving.
